Salsa Verde de Habanero con Orégano Recipe
Intro
Some salsas are born from intention, and some are born from forgetting cilantro at the grocery store. This one is the latter and honestly, it might be better for it.
This salsa verde combines roasted tomatillos, raw tomatillos, and habanero for a punchy, bright, citrusy heat that instantly wakes up anything it touches. The fresh oregano gives it this savory, herbal note that feels almost unexpected in a salsa… but in the best way.
It’s a happy accident and a strong case for always growing oregano in your garden!

Ingredients
YIELD: 1 cup
345g tomatillos, whole/divided (about 6–7 tomatillos)
20g habanero, whole (about 2 chiles)
30g garlic, whole and still in its paper (about 6 cloves)
4g Diamond Crystal kosher salt (about ¾ tsp)
2g fresh oregano, minced (about 1 tsp)
1g Knorr chicken bouillon (optional, about ¼ tsp)
40g white onion, small dice and rinsed under cold water (about ¼ cup)
20g water (about 1 Tbsp + 1 tsp)
Instructions
Broil the Veg
Cut half the tomatillos into quarters. Place the remaining whole tomatillos, garlic, and habaneros on a sheet tray. Broil for ~12 minutes, flipping halfway, until blackened and tender.
Peel garlic. Stem the habaneros. Reserve.
Blend the Base
Add raw tomatillos, roasted ingredients, salt, bouillon (if using), and water to a blender. Purée to your desired texture.
Finish
Fold in the onion and oregano. Taste and adjust acid, heat, or salt as needed. Serve immediately or chill — the flavor gets even better after it sits for an hour.
