SALSA BRONCONA - She’s Spicy, She’s Loud, She’s Ready to Throw Hands
You ever sit down at a mariscos joint, order a cóctel, and immediately start scanning the table for the good sauce? You know the one: the mystery salsa in the reused Valentina bottle that tastes like it was made in someone’s garage with secrets and fire? That’s the energy we’re channeling here.
This one’s not for the mild-mannered. It starts with Valentina Black Label, gets a blast of charred habaneros and garlic, and finishes with a splash of Maggi for that salty, umami edge that hits like a gut punch in the best way.
I called it Salsa Broncona because she’s spicy and wants to fight! I love it on cócteles, but it really slaps with fried fish. It’s got that proprietary, secret-sauce feel you’d expect from a mariscos spot. Make it once and you’ll start putting it on everything.
Why This Salsa Works
Built on Valentina but turns the volume all the way up
Charred habaneros bring depth and slow-building heat
Garlic in its jacket gives you that roasty mellow sweetness
Maggi adds a secret punch of umami
Ingredients (Yield 3.5 Cups)
350g (1½ cups) Valentina hot sauce (black label)
20g (about 4–5) habanero chiles, whole
25g (5–6 cloves) garlic, whole and still in its paper
50g (3 tbsp) water
3g (½ tsp) Jugo Maggi
Optional: pinch of sugar if needed to balance heat
Instructions
On a comal or dry skillet, char the habaneros and garlic (still in their paper) until they’re deeply blackened and tender.
Peel the garlic, stem the habaneros, and toss everything into a blender.
Add the Valentina, water, and Maggi.
Blend until smooth. Taste and adjust seasoning.
If it’s a little too spicy or sharp, add a pinch of sugar to round it out. Store in a bottle or jar and refrigerate.

Want it thinner? Add a little more water.
Want it hotter? Toss in an extra habanero!
This keeps well in the fridge for at least a week, and probably longer — if it lasts that long.
