Peach Pico de Gallo – Juicy, Zesty & Perfect for Summer
Introduction
I was walking through Green City Farmers Market last week with my buddy Adam, and the corn and peaches were insane. Peak summer in Chicago hits different—it’s short, it’s precious, and chefs treat it like a 3-month holiday. After months of brutal winters, we celebrate it with everything we’ve got.
This salsa is exactly that vibe. Pico de gallo, but with peaches. Ripe (but firm) peaches get diced up and tossed with onion, lime juice, habanero, and epazote (instead of cilantro, because I had it in my fridge and honestly? It slaps). It’s juicy, spicy, tangy, and a little unexpected.
As a kid, I’d bite into tomatoes like peaches. Now, I’m flipping it — peaches standing in for tomatoes in this bright, raw salsa that screams summer. If your peaches are underripe, a drizzle of honey or agave rounds it out perfectly.

Ingredients (Yields: 2 ¼ Cups)
440g (about 3 cups) firm but ripe peaches, small chop
65g (about ½ cup) white onion, small dice, rinsed under cold water
33g (about 2 tbsp) fresh lime juice
8g (about 1 small) habanero, seeded, stemmed, and minced
5g (about 2 tbsp) fresh epazote leaves, chiffonade
6g (about 1 tsp) Diamond Crystal kosher salt
Instructions
1️⃣ Combine & Marinate
Add all ingredients to a bowl. Toss gently to mix.
2️⃣ Let It Sit
Allow to marinate at room temp for 30 minutes so the flavors meld and the peaches release their juices.
3️⃣ Taste & Adjust
Taste and tweak—add more lime for brightness, salt for balance, or a drizzle of honey/agave if your peaches aren’t sweet enough.
Tips & Tricks
🔥 Swap the chile: Serrano or jalapeño work if you want less heat.
🍯 Underripe peaches? A touch of honey brings them back to life.
🥑 Add-ons: Diced avocado plays really well here for a creamy bite.
🌿 No epazote? Cilantro works, but epazote makes it special.
